Cannabis Bites: Paleo Lemon Bars (grain free + nut free)
There is something about summer that gets my creative juices flowing and right now I am obsessed with making my own cannabis bites. I keep them paleo so that I can eat them whenever I want. PLUS I have to admit that these cannabis bites have lit the creative fire a bit more and in all honesty, it’s the best feeling ever.
I love lemon bars, there is something about them that just makes me think of summer, lemonade, ice tea and just hanging out by the park, or hanging by the beach with a great book.
While the beach is no longer an option there is something incredible about walking around Boulder in the summer. I love how the sun makes everyone even friendlier and that the streets are covered by luscious trees and there is always something going on.
It’s pretty awesome.
I honestly cannot believe that it’s been a year since I fell for Boulder. Okay, maybe not exactly a year but you know what I mean. I feel like these are my ode to summer and Boulder, lemon bars.
I love how creamy these bars are and how much they taste like the regular old lemon bars you grew up eating, without all the sugar and dairy which in my case is a no-no.
No, I didn’t eat cannabis-infused lemon bars when I was little but it has been a while since I had a really good paleo lemon bar. I don’t actually think I have had one before until I made my own
These bars have turned into my Sunday afternoon ritual, after I get everything done for the blog and basically prepare for the week, these are the perfect going on a lazy summer stroll type of treats.
I blast some music, gather my ingredients and get going.
Truth be told I also like to burn some incense and just make the whole experience when making these lemon bars, cooking should be fun and relaxing, it shouldn’t be something you dread.
I normally let them cool, while I make myself some iced tea or lavender lemonade and get ready for my afternoon hike. Once they’re cool, I cut into them and grab a square and take it on the go.
Headphones on, nibbling on the cannabis-infused lemon bar while walking down my street and about 15 minutes before I hit mount Sanitas.
Okay, guys, gonna go get some citrus so I can make these bars again, sometimes it’s fun to use different citrus like blood orange, grapefruit, kumquats or whatever else you might fancy.

WHAT YOU NEED TO MAKE PALEO CANNABIS INFUSED LEMON BARS
3 T of maple syrup, I like this one from
4 T cannabis infused coconut oil, put in the fridge to harden
3 T of ghee + 2 T of lemon zest
pinch of salt
1.5 cups of cassava flour
1 cup of maple syrup + 1 cup of fresh lemon juice
1/2 tsp of salt
3 T of lemon zest
6 large eggs + 2 yolks
2 T of cannabis coconut oil
1/4 cup of cassava flour
WHAT YOU GOTTA DO TO MAKE THE PALEO CANNABIS INFUSED LEMON BARS
Preheat oven to 325.
Mix all the ingredients for the crust in a bowl. Cutting in the harden cannabis coconut oil. Put in a parchment lined 9 by 9 baking dish and bake for 10 minutes.
Mix all the ingredients for the filling and pour into the pre-baked shortbread crust. Bake for another 20-25 minutes. Let cool completely, before cutting in.
