Dairy Free Horchata Style Breakfast Arborio Rice Pudding is a quick and easy breakfast made with Village Harvest Arborio Rice!
Hey, buggies. This past week has been crazy, so my first day at my day job was last Thursday and I woke up late, actually my alarm didn’t go off and I realized that at 7:26. I had set my alarm for 6:00 pm. Yeah.
My Lyft was scheduled for 7:30 and I had to be at work at 8:00. Thankfully, I made it to work on time, sure without my morning matcha or breakfast in me. If you know me, then you know, me without any caffeine, not a pretty sight. Of course, I am kind of happy because I carry matcha with me and collagen all the time so with some hot water at work I was able to make up for it. Minus the food. My first day was awesome and all I could think of on my way home was, I need to plan ahead better, first with my alarm and second with breakfast. Oh, and I need to get some food in me.
Breakfast is hands down one of my favorite meals of the day. I tend to have a sweet tooth and love having something sweet for breakfast. In Panama green smoothies and smoothie, bowls were hands down my go to. As much as I love green smoothies, right now the cold weather in New Mexico has me craving something warm to start off my day.
As much as I love oatmeal, right now my groove is making creamy Village Harvest Arborio Rice pudding and then topping it with berries. I can turn it on and forget about it while I shower and then when I get out of the shower it’s there waiting for me all warm, creamy and delicious. SCOREEE. No more going to work without breakfast. Well as long as my alarm is set at the right time. Hahaha.
Bugs, unlike regular long grain rice, Village Harvest Arborio Rice is short grain and it makes this creamy, hit me against the head, rice pudding. I like to cook mine in the slow cooker, with water, cashew milk, salt, cinnamon and vanilla bean until the rice creates this amazing creamy breakfast pudding. Then I drizzle raw creamed honey until it’s sweetened to my liking. You wanna know what makes this even more delicious, the fact that I swirl in vanilla ghee. Then I spoon that into small bowls, top it with fresh berries. YUMMY.

WHAT YOU NEED TO MAKE THIS RICE PUDDING
1 cup of Village Harvest Arborio Rice or other short grain rice
4 cups of water
1 cup of coconut milk
1 pinch of salt
1/2 cup of creamed raw honey
2 tablespoons of vanilla extract
1 tablespoon of ground cinnamon
1 cinnamon stick
1 tablespoon of grated ginger
1/4 cup of vanilla ghee or regular ghee or grass-fed butter
fresh berries to serve
WHAT YOU NEED TO DO
In the slow cooker, combine rice, water, salt, cinnamons sticks and grated ginger. Cover and cook on high heat for 2 hours. Once it is done, remove the top, stir in the coconut milk, ghee, raw creamed honey, vanilla extract and ground cinnamon.
Serve hot or cold with fresh berries.

In a large saucepan, bring the rice, water, salt, and cinnamon stick to a boil over medium heat. Reduce heat, cover and let simmer for about 25 minutes. Uncover and stir in the rest of the ingredients. Serve hot or cold with fresh berries.
