I’ve been wanting to share this recipe for soooo long but I had already a bunch of posts that were ready to go so I’ve literally waited a like four months, actually it wasn’t even that it was that I was still trying to see if I needed to do something else to perfect it, but it didn’t need it.. Oh and then with my detox in January, it was just not the time.  It’s finally here, and I can share away so you can bake away. So here’s the thing, before you totally hate me using a baking mix, hear me out. I’ve been wanting to make homemade fresh bread since before Thanksgiving, last year.  I wanted to make the bread so I could make some sandwiches. You know the kind Monica made, the moist maker. Yeah, I’m referencing Friends because I LOVE the show and watch it probably every day. Not gonna lie.

The problem was I made the bread and then ate it all. No joke. My friend was here and she got in pretty late and we were both hungry cause I literally left my day job and went straight to the airport to pick her up and was STARVING. So when we get back to my place, we legit sat in front of my fireplace and snacked on this freaking too good for words bread. I slathered mine with ghee, some avocado, and creamy garlic spread. It was INSANE. My friend then came up with the killer plan of topping it with coconut yogurt and fresh berries.

My mouth is watering as I type this.

So she looked at me and asked me if I made it and I laughed and said sorta. And then explained and she told me that regardless I needed to share this with you all. So, that is the reason behind the crazy good, sorta mine bread appearing on the blog.

I mean I could easily live off of this bread. The only thing that keeps me from making it every day is that I’m pretty sure that I would turn into bread by the end of the month. YEAH, cause I can’t stop eating it. It’s SO good.

Okay, now that I’ve convinced you just how good this bread is, I’m gonna go back to eating some. YEAH. I do have some with me and while it is currently morning, for some reason all I can think of is grabbing some leftover roasted chicken from the other night and making a sammy with it.

THE BEST GRAIN FREE BREAD (PALEO + REFINED SUGAR-FREE)

1 box of Simple Mills Artisan Bread Mix

3 large eggs

2 T of apple cider vinegar

1/4 cup of melted ghee or avocado oil ( I’ve tried them with both, they are equally tasty, but prefer the ghee, personally)

1/4 cup of water

2 T of chaga

2 T of each ground flaxseeds + hemp seeds

3 T of tahini

hemp hearts, sesame seeds, ground flaxseeds and sunflower seeds to garnish about 1-2 T of each

Preheat oven to 350 degrees. In a large bowl add all of your wet ingredients and mix. Then add the bread mix and chaga. Mix until combined and then slowly fold in the flaxseeds, hemp seeds, and tahini. You kind of want this swirly type of thing, don’t stress if it isn’t perfect.

Grease the loaf pan with avocado oil or ghee. Add the mixture and let sit for a few minutes. Pop it in the oven and bake for an hour, or until the edges start to pull away. Remove from the oven and let cool for 5-10 minutes before removing and transferring to a cooling rack. Enjoy with butter, ghee, avocado, as is or with jam. Anything goes. It will keep for a week. I like to use the stale parts as croutons for salads or toppers for soups. So again everything goes.
