Paleo Baked Eggs with Meatballs and Bacon made with real ingredients.
I love morning food–> I LOVE breakfast, which is why I am down for breakfast always and this baked eggs with mini meatballs and bacon is literally the best of both worlds. It’s breakfast and dinner smashed together to create something unforgettable.
Not only does it taste amazing, it is also SO easy to make.
Don’t you believe me?
Literally from your mini meatballs with some chopped bacon mixed in and bake them in your cast iron skillet.
Then after about 10 minutes remove them, take some of the fat out, pour some delicious homemade marinara sauce like this one from Rao’s and crack an egg on top.
Pop in the oven for about another 2-3 minutes and you are done.
I know, your totally envisioning these in front of you and your mouth is watering.
How do I know?
Well, cause I’m just looking at the pictures and I’m thinking maybe its time to eat LOL.
Okay. Maybe I should go make some and be back.
Oh, don’t forget that crusty bread.
To sop up all that sauce.
Oh and the yolk porn!
Cause that yolk when it runs with that marinara sauce is everything and more.
I know you totally want it now.
The GOOD thing is you can get all of these ingredients at your local Whole Foods..!
WHAT YOU NEED
+2.5 cups of Rao’s Homemade Marinara
2 eggs, per person, I like using Vital Farms eggs
+1 lb. of grass fed ground beef
4 slabs of bacon, cut into pieces.
1 tablespoon of Just Spices Spicy Garlic Blend, or any seasoning of choice
+1 teaspoon of ground turmeric and cinnamon
+Real Salt Garlic Salt, to taste
+fresh cracked pepper to taste
+ good quality crusty bread to mop up the sauce, YUM
WHAT TO DO
Preheat oven to 450 degrees.
In a large bowl add the grass-fed ground beef, about 2 teaspoons of salt, the Italian, pieces of cut bacon, seasoning blend, the spices and black pepper and combine until everything is mixed, don’t over mix, please.
Then combine your little meatballs.
In your cast iron skillet put the meatballs and bake for about 8-10 minutes.
Remove from the oven and if there is a lot of extra fat removed from the cast iron skillet. Pour the marinara sauce, and then crack your eggs.
I used this personal size cast iron skillet so I only cracked one egg, I made this for the crowd into cast irons, so that two people share a cast iron. I know I’m generous and then do 4 eggs in each skillet.
Bake for an additional 2-3 minutes. I turn on the broiler so it cooks quicker.
Serve with crusty bread.
