Paleo Pineapple Ginger Mint Green Smoothie is the perfect combination of spicy, sweet and everything good in this world. I LOVE adding ginger to my smoothies for all of its wonderful health benefits + the spicy kick.

As much as I am a cold weather girl and will take fall and winter over summer in a heartbeat, I’m a tropics fruit girl at heart. Pineapple, papaya, watermelon, passion fruit and more.

SO obviously this smoothie is a go-to for me all the time.

I’m currently digging this smoothie cause it takes me back to the humidity that is Panama and snacking on pineapple while hanging out in a hammock. My mom makes this crazy good pineapple ginger iced tea and this is my version, turned into a great post workout, breakfast or anytime snack type of drink.

Before we jump into this spicy, minty green smoothie I wanna share something with you guys.

 I just discovered my favorite coffee joint here in ABQ Humble Cafe I’m obsessed.

 OH, and I have something fun to share with you all. Or maybe you won’t find it as exciting. I started drinking cow milk again, raw milk. At first, I was like this is so gonna make me sick, it didn’t. I’m not gonna say I like to cook with it cause I don’t, it’s more of I’ll drink some maybe warm with cinnamon or cardamon.

After discussing this with Kate, I realized why not, if my body can digest it, it’s NON-GMO, grass-fed, organic. Why not?

OBSESSED. I still make my smoothies with nut milk, I’m currently making my own nut milk and having a blast with that.

Back to smoothie land.


GINGER. Is such an incredible healing root. While it is commonly used in Asian cuisine, I love the Ayurvedic approach and really enjoy adding it to a lot of my foods. It is such a great superfood. It is great if you have IBS (like me) and does wonders for your stomach if it is upset. My mom also drinks ginger shots every day to help with her allergies.

The awesomeness of the smoothie is the interesting combo between the ginger and mint. I love how they balance out the sweetness of the pineapple. To make it creamy, I use cashew yogurt and frozen bananas.

 I am really into Vital Protein Collagen Beauty Green right now and love adding it to all my smoothies, I love how the flavor doesn’t change at all and I get a bunch of health benefits.

I’m gonna go workout now and then make this smoothie cause it’s really good and good news is I have all the ingredients in my fridge/freezer.

1/2 cup of cashew yogurt, see note
1 cup of frozen pineapple
1 frozen banana
1/2 cup of coconut water
1/4 cup of fresh mint
2 tablespoons of fresh ginger grated, I just take a couple inches of fresh ginger root and add it to my blender, skin and all, just make sure you are using organic if you do this
2 scoops of collagen beauty green from Vital Protein, see note


In a powerful blender like a Blendtec, add all the ingredients and blend until smooth.
Enjoy right away.

this is the cashew yogurt brand I use, you can make your own if you wish, one green plant has a really cool and easy recipe. I haven’t tried it yet if you do let me know.
