I know what your thinking, another creamy overnight oats recipe.
Just hear me out.
These overnight oats are creamy, delicious and full of vanilla flavor. I know most people say that about their overnight oats but these are something else. The vanilla works its way into the actual oats, it also finds its way into the quick raspberry vanilla sauce that makes my mouth water.
I actually created this recipe by accident. Don’t all my yummy recipes happen this way? I think. I should look into that. Haha. Kidding. I sometimes talk to myself.
I was making overnight oats one evening, when I took out the almond milk that had less than half a cup still in the carton. Thinking that I had a few more cartons in my pantry. I poured the little amount that was in the near empty one and started to search for another carton. Turns out after searching my entire kitchen. I was out.
I didn’t even have hazelnut milk or cashew and I didn’t feel like going through the trouble of making my own nut milk just for oats especially since it was almost midnight.
What I did come up with was a can of full fat coconut milk.
I was actually saving it to make some coconut whipped cream. I decided to add it to my oats.
Best decision ever. The creaminess of the coconut milk create a luscious and almost naughty creamy oat mixture. I was so impressed I felt like it was more of a dessert than a breakfast item.
I had enough oats the following morning that I had the opportunity of topping them with some leftover stewed raspberries.
I was in oat heaven.
To keep these overnight oats gluten free make sure you use gluten free certified gluten free oats. I personally like Bob’s Red Mill Gluten Free Rolled Oats.
I played around with the recipe and the final product was these Vanilla Raspberry and Cream Overnight Oat Jars. They are vegan, gluten free and oh my give me one now delicious.
If you double the raspberry vanilla sauce I would totally recommend you stir some into your banana nice cream or into some cashew butter and eat it with a spoon. Just a thought.
You are going to love these. Trust me. They disappear in like two days and I’ve made them a couple more times since.
WHAT INGREDIENTS YOU NEED TO MAKE CREAMY OATS
1 cup of Gluten free oats, like Bobs Red Mill
1 can of full fat coconut milk, like
1/2 cup of vanilla almond milk
1/2 teaspoon of salt, like Real Salt
1 tablespoon of vanilla
2 cups of frozen raspberries
1 vanilla bean, split in half
1/4 cup of maple syrup + 2 tablespoon
1/4 cup of orange juice
WHAT YOU NEED TO DO
In a large bowl combine the gluten free oats, coconut milk, almond milk, 1/4 cup of maple syrup. Cover and place in fridge for about 30 minutes.
In the mean time, in a small saucepan add the frozen raspberries, 1/4 cup of orange juice, 2 tablespoons of maple syrup and the split vanilla bean. Cook on low heat for about 12-15 minutes until the raspberries break down, the mixture is fragrant and it has thicken slightly. Set aside and let cool completely. Take the jars or cups you will be serving the overnight oats in and arrange, split the oat mixture in 4 different jars and top with the vanilla raspberry sauce. Place in the fridge overnight. Enjoy for breakfast the next day or as a snack or even dessert.
