Classic Crispy Paleo Waffles (Grain Free + Nut Free)

I love waffles.
The bring me back to my childhood.
My mom would always make homemade waffles on special occasions, she would dress them up with homemade cherry sauce or strawberries. Depending on what was in season. She would add scoops of good quality vanilla ice cream and sometimes a drizzle of homemade caramel sauce.
As we got older the dressed up waffles became reheating those waffles that she would make in bulk and then let us dress up as we pleased.
The different stages of high school definitely show up.
The period of peanut butter and banana everything.
The period of Nutella in all its glory.
And then no waffles well because I was diagnosed with celiac.
Okay, so yes I did get waffles but instead of being my mom’s homemade waffles they turned into buying them at the store. (BTW the quality of gluten-free frozen waffles is SO much better now)
After years of experimenting my mom finally was able to create the best gluten-free waffle recipe ever that also happens to be grain free. Living in Panama cassava flour was a lot more common than any of the other gluten-free options out, which is why I use cassava flour as a base, while I have tried with others, I haven’t been successful in achieving the same texture I did with these.
Well in honor of my beautiful mother and mother’s day I wanted to share with you all my favorite crispy waffle recipe. I’ve been using this recipe for years now and I’m surprised it wasn’t on the blog.
It is easy to make, you can leave all the dry ingredients all mixed up and then all you have to do is blend everything up with the wet ingredients and pour into waffle iron and eat.
I like using cassava flour and tapioca starch in here it really makes for a great waffle.
WHAT YOU NEED TO MAKE THESE CLASSIC CRISPY WAFFLES
3 eggs
1/2 cup of full-fat coconut milk
2 T of maple syrup
1 T of vanilla extract
6 T of ghee or coconut oil
1/2 tsp of baking soda
2 tsp of baking powder
1/4 cup of tapioca starch
1 1/4 cup of cassava flour
2 tsp of apple cider vinegar
1/2 tsp of salt
ADD IN’S
-a few scoops of collagen peptides
-cinnamon
-orange zest
-chaga
-grated carrot + apple
-grated zucchini with chocolate chips
-cacao powder + cinnamon + chaga
WHAT YOU NEED TO DO TO MAKE THESE CRISPY WAFFLES
Add all dry ingredients into a big mason jar, shake well. When ready just add the wet with the dry into the blender, blend until smooth. Pour batter into waffle iron and cook to your liking.
Remove from waffle iron and top with whatever your waffle loving heart desires.
I love topping my waffles with just about everything from, ghee and pure warm maple syrup to good quality jam and coconut yogurt to all types of nut butters with fresh fruit to just about anything. Let your heart aimlessly wonder with all the options.
