As a kid, I loved broccoli and cheese soup and even though it wasn’t something I grew up eating at home I still savored the moments when we went out to eat and I had the pleasure of enjoying it. It was the unknown that sparked the curiosity, I mean broccoli and cheese in a soup? We didn’t have that, growing up in a Colombian household, that combo wasn’t a thing.

Broccoli and cheese soup soon became my own little tradition, a soup I made when I felt like I needed a hug, it was my go to when I was far from home in college and then has recently swirled its way back into my life.

I’ve always loved to play around with different dairy-free versions of this soup but recently I’ve been adding nuts and seeds into my creamy soups to give them this extra creamy, nutty almost cheese-like flavor to them without any dairy.

I’ve been waiting for it to cool off enough here in Colorado to make this soup and after coming home soaked one afternoon due to some unpredictable rain showers in Castle Rock last week the only thing I wanted was a bowl of hot broccoli soup. I love adding pumpkin seeds for their amazing health benefits. Especially for us women with hormonal imbalances, PCOS or/and mood disorders.

This broccoli soup is easy to make, filled with amazing ingredients and has this addicting cheesy flavor from the nutritional yeast and the creamy garlic.  What I really like is that I’ve made this soup with fresh broccoli and with frozen and time and time again taste amazing.

This is the perfect -it’s summer but it’s starting to get a little cold kind- of soup. Bright, vibrant, with comforting and warm tones this soup will bring a smile to your face. I really hope you all give this Creamy Vegan Broccoli and Pumpkin Seed Soup a try!

WHAT YOU NEED TO MAKE THIS CREAMY BROCCOLI AND PUMPKIN SEED SOUP

3 T of ghee or grass-fed butter, use vegan butter to keep vegan

1 large carrot

3 cups of fresh or frozen broccoli

1/4 cup of pumpkin seeds

4 cups of bone broth, you can use veggie to keep it vegetarian/vegan

1 cup of water

3 T of creamy garlic or minced garlic

2 T of lemon juice

3 T of nutritional yeast

salt + pepper to taste

toppings: pumpkin seeds, sunflower seeds and/or croutons

WHAT YOU NEED TO DO MAKE THIS CREAMY BROCCOLI AND PUMPKIN SEED SOUP

In a large pot add the broccoli florets, diced carrots, and bone broth + water and cook on medium heat until the broccoli and carrots are cooked. Let cool slightly, and then transfer the broccoli, carrot, and the rest of the ingredients with half of the bone broth leftover and blend the soup until creamy. Depending on your blender this should take about 3-5 minutes. Once blended add the soup into the pot and stir with the rest of the liquid and check for seasoning.

Heat the soup up and then ladle into each bowl before swirling with cashew cheese sauce and topping with toasted pumpkin seeds and croutons
