Dairy Free Creamy Broccoli Spinach Hemp Soup is made out of less than ten ingredients, completely gluten free, full of fiber, greens and omega threes.
I am currently writing this post with a huge bowl of this soup next to me and yes, I am having it for breakfast and no it isn’t weird. Okay.. maybe it is a little weird to have soup for breakfast, but with the temperature a bit cooler or colder, warm foods have been my go to as of lately. I’m talking savory oats, regular oats with stewed apples and as of late, this creamy broccoli spinach soup that is filled with hemp hearts + oil to add a bunch of omega three fatty acids making it the perfect winter soup to keep you feeling happy and not falling down the winter blue hole.
This soup is incredible decadent without any dairy, uses less than 10 ingredients and to make everyones life a bit easier I use frozen organic spinach and frozen organic broccoli. The soup is bursting with flavor, and honestly it can be eaten at anytime of the day, not just breakfast like me.
Depending on my mood I have a side of avocado toast with it, or maybe some spicy hot chocolate. OH yes. I did go there.
The soup is filled with veggies + green power from the combination of spinach, broccoli and ginger.
I added ginger for it’s unique spicy kick and also all of it’s awesome health benefits.
This creamy spinach and broccoli soup is legit gonna make your weekday eating SO much easier, you can totally make it in advance on the weekends and enjoy it during the week. YES this spinach soup is currently on my regular rotation, perfect in winter and easily adaptable for any time of the year.
The options are endless you can add or take away whatever you aren’t feeling.
I use bone broth for it’s amazing health benefits, you can use veggie broth
I add a mixture of hemp hearts + cashews to make it creamy and keep it dairy free. Omit the cashews if you have a nut allergy.
You can swirl in some coconut milk or yogurt or sour cream at the end if you like.
You can leave it chunky and not completely puree it.
Oh and feel free to add something like onion or garlic if you want, I leave them out because my tummy doesn’t agree with them.
More good news babes: not only is this soup dairy free, gluten free and incredibly DELICIOUS , but it is also incredibly high in vitamin A, C, K and D along with high in zinc.
Alright babes there you have it, my favorite dreamy, creamy spinach broccoli and hemp soup.
CREAMY SPINACH & BROCCOLI HEMP SOUP
2-3 inches of fresh ginger
3 cups of fresh or frozen broccoli
3 cups of frozen spinach
3.5 cups of bone broth or veggie broth
1/2 cup of hemp seeds + more to garnish
1/4 cup of raw cashews
1/4 cup of nutritional yeast + more to garnish
3 T of hemp oil + more to garnish
salt + pepper to taste
In a large pot add all of the ingredients but the hemp seed oil, and cook for 5-8 minutes on medium low heat. Turn it off and you can either blend it up with your blender or immersion blender. I use my Blendtec blender. Blend until smooth.
Check seasoning and add more salt + pepper if needed. Swirl in the hemp oil.
When ready to serve add more hemp seeds + oil and nutritional yeast. Enjoy warm or at room temperature.
NOTES
I used this hemp oil in the recipe, you can use whatever hemp oil you want and if you don’t have any, use olive oil or avocado oil. It adds healthy fats and makes it creamier.
I don’t peel or grate the ginger, when you are blending the soup it just incorporates in. Just make sure you wash the ginger really well prior to adding it to the soup.
If you are using fresh broccoli cook until the broccoli is tender, I prefer to use frozen broccoli because it is already prepped for me and makes it easier.
This looks amazing! I can’t wait to try it, I want to try it with sour cream added, that sounds perfect!
YESS! It is soooo good and easy to make.
This makes me so curious because hemp is prohibited in our country. I have never even smelled a bit of it. But I guess this soup would taste great because it has very good veggies such as spinach and borccoli.
This looks absolutely amazing. I love the color. I think that the flavors on this would go so well together too. I have to give this one a try.
YEAH! This is perfect and if you are doing Whole 30 in January.
