Paleo Strawberry Chocolate Truffles (dairy free + refined sugar-free)
I honestly have no idea where to start today other than I’ve been sitting on this recipe for a couple weeks now and the only reason I haven’t shared it has been because I’ve been on a huge get my shit together cleanse.
Let me backtrack a bit.
Before my move, I realized just how much I dislike change. While I embrace change, I only like it in small doses, too much and the creature of all things routine begins to lose her shit and freak the hell out. So when I started to notice this little pattern of mine I went from one extreme to the other which meant, I stopped planning and stopped going by a routine which keeps me sane 90% of the time.
You probably think I’m crazy because let’s face it why the hell would I go from one extreme to another, the real honest answer is, I tend to go from one extreme to another and can say it can be attributed to my mood disorder but also my personality.
So the very organized, always sticking to a schedule and list making girl went out the window and this go with the flow, let things happen wanna be- came out. s. That ended up backfiring, and I started to get anxious because I couldn’t juggle everything I needed to between the blog, my day job and just the chaos that the move brought and all the changes, it started to really take a toll on me.
Fast forward to about three weeks ago.
I started to little by little bring back the old me and find a balance between going with the flow regarding things we cannot control like the weather, traffic, a recipe not working even after 7 different attempts, and random shit that at the end of the day isn’t something you can honestly change. I am back to following an editorial calendar for the blog, but finding a balance between that and creating recipes that bring me joy like these caramelized peach pancakes because hello, who doesn’t love summer peaches and these truffles that truth be told have added to the peace like vibe going on right now.
Well, I could say it’s thanks to the cannabis coconut oil I use or the fact that they have CBD dark chocolate but I really wanna take credit and say that it’s because I created them. Haha.
The freeze-dried strawberries add this pop of texture and also tartness and really goes great with the creamy dark chocolate filling. I coat them twice in dark chocolate to create a thick shell before rolling them in the crushed up strawberries.
I might be known to make these truffles on the weekend and again mid-week because let’s face it, they are that GOOD.
I really like that these truffles come together so quickly, and they are ridiculously forgiving. If you don’t have cashew butter use any other nut butter of choice, coconut butter is fine, I’ve actually done this with peanut butter, almond butter and tahini. I really like the subtle aspect of the cashew butter but you can go either way. Leave out the collagen peptides to keep vegan, and if strawberries don’t do it for you use any freeze-dried fruit. I use the freeze-dried fruit for the contrast of texture and because they keep their texture even after you refrigerate them.
ALL YOU NEED TO MAKE THESE FIRE Paleo Strawberry Chocolate Truffles
10 oz of sugar-free dark chocolate, I used Thera Treats
3 T of coconut oil or ghee or cannabis coconut oil
3 T of cashew butter
1/2 cup of hot water
a good pinch of salt, I used Real Salt
1/4 cup of collagen peptides, optional
optional add in’s: 3 T of honey, 1/2 tsp of edible essential oil like orange or lavender, 1 tsp of cayenne pepper or 2 T of espresso powder
1 cup of freeze-dried strawberries, see notes
coating:
3 T coconut oil or ghee or cannabis coconut oil
2 T of cacao powder
4 oz of cbd dark chocolate, I used Thera Treats
1 T of cashew butter
What you need to do to make these BOMB Paleo Strawberry Chocolate Truffles
In a large bowl add all the ingredients but the freeze dried strawberries and the hot water. Mix everything and then add the hot water 1/4 cup at a time and mix until well combined with a spatula. Place in the freezer for about 10-15 minutes and then with a tablespoon scoops out two spoonfuls and roll before putting on a plate and freezing until solid.
Mix the ingredients for the coating over a double boiler and set aside.
Take the truffles out and roll in chocolate coating mixture, twice. Then roll over the crushed freeze-dried strawberries.
Place on a plate and pop in the fridge until ready to eat. Enjoy!
