I have a thing for waffles. I mean I could easily eat waffles every day for the rest of my life. I love how you can literally flavor them up and down any way you like. I love that you can top them with whatever you want, and until pancakes, they have these crispy edges that remind me of the perfect cookie or brownie. The best of both worlds, when it comes to food that either means texture or flavor.

There is something about extremes that is comforting to me. I can be the bipolar to my polar opposites, as I like to refer to the tendencies my manic-depressive illness lends me.

On another note, babes these waffles are hands down AMAZING. I mean I literally am dreaming about them. They are fluffy and crisp and full of flavor.

I love that the spices lend this warmth to them and then the simple cashew cream with fruit make it a perfect easing into the concept of summer almost ending and fall coming in.

Then again these waffles would be great any time of the year.

I’ve been making them up and down for the last month or so.

I normally trip the recipe on a lazy Sunday and then freeze the extra ones and have breakfast on the go for a week or two.  I normally have a couple friends over and we have a waffle afternoon.

I fun are we.!!

OKAY. In all seriousness please make these. They are insane.

I am not just saying that.

 

Gingerbread Waffles (Paleo + Refined Sugar Free)

WHAT YOU NEED TO MAKE THESE AMAZING GINGERBREAD WAFFLES 

1 tsp of ground ginger + ground cardamom

2 tsp of ground cinnamon

1/2 tsp of ground cloves + salt

6 T of melted ghee

1/2 cup of full-fat coconut milk

3 eggs

1/2 cup of tapioca starch

1.5 cup of cassava flour

2 T of lemon juice + vanilla extract

1 tsp of baking soda + flour

cashew cream

1 1/2 cups of raw cashews, soaked overnight or do a quick soak with boiling water

1/2 cup of full-fat coconut milk

5 dates, pitted and soaked in hot water for 5 minutes

2 T of lemon juice + orange juice

1 T of vanilla extract

2 T of orange zest

a pinch of salt

Mix all ingredients in a large bowl. Follow your waffle irons directions until all the batter is used. To make cashew cream blend all ingredients until creamy. You might have to stop, scrape down and blend a few times.  until and then top with a homemade cashew cream and strawberries and banana slices.

  1. I love all the natural ingredients used for these waffles. When I saw sugar-free, I was a little apprehensive of exactly what that would be. These look delicious!

  2. This is making me think of Thanksgiving and Christmas. We eat everything gingerbread during these two holidays. It would be fun to make this recipe the next time the grandkids come over.
