I’ve been on the bacon boat for some time now.
I actually started eating bacon for the first time in I think at least eight years a few months ago.
Oh, and I haven’t looked back since.
I’ve always been a bacon girl but the ed in me said NO.
Bacon wasn’t on the allowed list.
I made peace with bacon and bacon fat earlier this year when my awesome holistic nutritionist/eating disorder coach told me to jump on the bacon wagon.
I have jumped headfirst into the bacon wagon and couldn’t be happier.
I’ve been getting my bacon from Butcher Box. Actually, I’ve been getting my meat and chicken from them and have stopped buying it at the store.
Well, that is a tale for another day. Or should I say post?… Both.
I’m also all about that bacon fat, that bacon.

My new favorite is roasting cherry tomatoes in bacon fat.
I like to add them to my scrambled eggs.
I like to add it to this awesome pasta salad.
I use my current favorite brand of pasta at the moment that is organic and gluten-free. The texture is amazing and it tastes great. PLUS sometimes its hard to find a gluten-free pasta brand that can hold its shape hot and cold.
Instead of using lettuce I use parsley.
Tons and tons of parsley.
I also like to toss the pasta with a little of the bacon fat to get the bacon flavor in every single bite.
Then cause we can never have enough bacon I add bacon broken into some pieces.
This is the perfect recipe to enjoy year round but it is perfect for the springtime and summertime and any picnics. YES.!
I’ve been making it on meal prep Sunday’s and snacking it on throughout the week. I took it on a picnic a couple weeks ago and served it with this crazy good and awesome looking hibiscus ginger iced tea. SO good.
You Ready? Whatcha Need
1 package of Bionaturae pasta, gluten-free if necessary
1 lb of cherry tomatoes
2 cups of flat leaf parsley, roughly chopped
4 tablespoons of reserved bacon fat
1 lb of bacon, see notes
2 tablespoons of nutritional yeast
2 tablespoons of olive oil, optional
2 teaspoons of dried oregano
salt + pepper to taste
Get Your Bacon On
Preheat oven to 350 degrees
In a cookie sheet with a cooling rack over it, lay the bacon over it.
Pop the bacon in the oven for 15-18 minutes until the bacon is crispy.
Meanwhile, bring a large pot of salted water to a boil.
When the water is boiling add the pasta, stir to keep pasta from sticking. Cook until al dente.
When the bacon is done, remove the cooling rack with the bacon and reserve the bacon fat for another use. You only want 4 tablespoons. Take the cherry tomatoes, toss them with bacon fat, some oregano, and pop in the oven.
Roast for about 15-25 minutes.
When everything is ready, in a large bowl add the pasta, olive oil if using, nutritional yeast, the roasted tomatoes, parsley and the bacon.
