Good For You Paleo Lemon Lavender Pudding is made out of less 7 ingredients, good for you gut and totally amazing!

I’m pretty sure I found my new favorite dessert, this lemon lavender pudding is the perfect summer staple and I have to admit that it totally makes me swoon. As you babes know I am OBSESSED with anything lemon related.

This pudding is like I just wanna dance and rock and roll tonight. I have no idea if those are lyrics to a song or just something I randomly made up.

Could be a mixture of both. Any who.

I love topping this luscious pudding with fresh berries or coconut whip. I also really like that since I use my weck jars I can take this with me on the go, which I love.

This my friends isn’t your typical stir from the box pudding. As always your girl here has created something made our of real wholesome ingredients. You all know I treat my food like medicine.

Full of healthy fats, protein and collagen from the grass fed gelatin this is gonna be your go to, feel good dessert.

So not only does this pudding taste amazing, it’s also super simple to make.  You know me,  I really don’t like spending hours upon hours making one thing. Unless were talking Thanksgiving, but that’s more a meal.

Good For You Paleo Lemon Lavander Pudding-Follow Our Passion

I’ve been talking about collagen for a while now and I’m bringing into the party –> gelatin OH and if you aren’t in the gelatin party crew you need to get in there asap.

There are so many health benefits it’s a no brainer in my book.

So gelatin for those of you who don’t know is a type of protein that is derived from collagen and it provides us with an important amino acid aka the building blocks of protein.

Gelatin is really good for our gut health and improves our digestion sorta like collagen does. People ask why it’s so important to have a healthy gut and everything from out mood, to bloating, food interlace and more starts with our gut.

Part of keeping my manic depressive in check is having a healthy gut, so it’s very important to me.

It also improves our sleep which for me a big bonus since I suffer from insomnia and again, lack asleep can trigger an episode for me so, when I say I truly use food as medicine. I’m so not kidding.

Babes you are gonna wanna make this pudding ASAP.

WHAT YOU NEED

1 can of full fat coconut milk

3 teaspoons of beef gelatin, I like using Vital Protein

1/2 cup of lemon juice + 3 tablespoons of the zest, separate

1/2 cup of raw honey, use more if you want it sweeter

1 tablespoon of rose water

1 tablespoons of vanilla extract

1 cup of water

3 tablespoons of edible lavender to make lavender water

toppings, summer berries, pistachios and coconut whipped cream, you can use whatever you want though, peaches, cherries or just eat as is. I love the contrast of textures.

WHAT TO DO 

In a small saucepan on medium low heat add the water and lavender, bring up to a boil and turn off. Let the lavender steep for about 20 minutes.

In a small bowl combine the lemon juice, rosewater, vanilla extract and the gelatin. Let sit, to bloom the gelatin. 3-5 minutes.

When the 20 minutes have passed, strain away the lavender and mix together the water, canned coconut milk and lemon zest. Bring this up to a simmer and then turn off.

Mix the honey and the gelatin and then add to the coconut milk mixture. Stir and when it has cooled enough, transfer to a glass bowl with fitted lid and place in the fridge.

Let set in the fridge for about 4-5 hours. Before you serve give it a whisk.

Top with summer berries, pistachios and coconut whipped cream.

  2. I cannot believe that gelatin has a lot of benefits! SO COOL! It’s the kind of dessert that you want to have especially during the summer. It’s light and the berries are fresh! You’re right, it’s so easy to make as well. Love it!

  10. I don’t eat meat so other than skipping the beef gelatin and replacing it with an alternate product, I’m all go on this delicious dessert. I can almost taste it. Yum!
