No Bake Quinoa Crunch Chocolate Energy Bites

I often feel like most of the recipes that I create are sparked by something I’ve come across or eaten when I was younger. There a specific memory of me eating crunch chocolate bars as a teenager. I can still feel the popping sensation in my mouth when I bit down on the chocolate bar. I have always been all about texture, I think the culinary mind in me is always trying to recreate certain experiences and sensations through food.

Food has always been a journey, a way for me to go back in time, bring a smile to my face and often recreating memories when the old ones are too sad to think off.

Throughout the years when my eating disorder ruled me, I had a weird and very abusive relationship with food, while it was still something that helped me and brought a smile to my face it was still the enemy.

No Bake Quinoa Crunch Chocolate Energy Bites

Part of getting to a healthy place with food is being able to eat a lot of things that were on my “not allowed” list, and while there are a lot of things I eat now like, french fries, rice, pasta and basically anything carby, I still need to keep in mind that when I eat full of processed shit foods, I end up feeling like shit later on in the day.

I added sprouted quinoa because it is easier to digest than regular quinoa and adds tons of crunch and protein and then added sunflower seed butter to keep it nut free, some CBD chocolate because at the end of the day it is me and a few different seeds, the outcome is a delicious full of flavor, crunchy bite.

I like that they keep their consistency and I can take them with me on hikes, they do soften if it is hot outside but I still feel like the overall chocolate bar turned energy bite is achieved.

I gave some to try to a few friends who are not gluten-free or anything like that and they are loving them. I always test my treats with friends who don’t eat healthy because if it tastes healthy to them then it isn’t ready for the blog.

Alright, my friends, there you have it my go-to quinoa crunch energy bites, they are packed to the brim with quinoa, pumpkin seeds, and chocolate, one bite will instantly bring a smile to your face.

I also really like that these are no-bake, so you don’t really have to do much other than gather your ingredients and mix, shape and pop in the fridge for about 30 minutes. Not gonna lie thought, I have been known to enjoy these straight from the bowl.

No Bake Quinoa Crunch Chocolate Energy Bites

INGREDIENTS 

3/4 cup of sprouted quinoa, it’s easier to digest, you can use regular quinoa if you want

3/4 cups of sunflower seed butter

1/2 cup of pumpkin seeds

1/4 cup of sunflower seeds

2 T of ghee or coconut oil

2 T of maple syrup

3.5 oz of dark chocolate melted, I like using Thera Treats No Sugar Chocolate

1 tsp of cinnamon and chaga

a pinch of salt

DIRECTIONS

Take a large pan, and on medium-low heat “pop” the quinoa stirring occasionally until it is fragrant. Careful to not burn, about 3-4 minutes.

In a bowl add the sunflower butter, ghee, or coconut oil, and maple syrup and mix until combined. Then add the cinnamon, salt, and chaga. Mix in the rest of the ingredients and place in the fridge for a few minutes before using a small ice cream scoop to scoop out, form and place in a parchment lined cookie sheet and placing in the fridge for 30 minutes.

  3. My mother used to make something similar. They looked a lot different, basically square crunchy bites but as far as i remember the recipe was very similar. came across your blog while randomly surfing. found it helpful. keep up!
