One Pot Spicy Sausage and Kale Soup (Paleo)
The temperatures have been cooling up slightly here in Boulder and by slightly I mean dipping into the late forties in the evenings while the sun is still out. It’s this incredible combination of the nice soft summer sun with the cooler touch of fall. To celebrate this incredible time of passage I’ve created this delicious, paleo soup that is filled with tons of flavor with minimal ingredients. I use good quality bone broth as a base, browned spicy Italian sausage, chunks of Japanese sweet potato and bitter kale to make this give you a good sweat soup.
Growing up Sunday meant soup to me, every single Sunday my mom would make a huge pot of soup and there would be rice and avocado and basically family in a memory for me. Now that I am living closer to my mom, an hour versus seven I can get together with her and make a big batch of soup. This time though, I make this spicy sausage sweet potato and kale soup, I like using very spicy sausage from my friends at Mulay’s, not only is it paleo but they are also local which I LOVE. Their killer hot sausage is amazing, and full of flavor, I like to get it in their pre-cooked packaging, brown some up and save the rest for later. The Japanese sweet potato holds their shape and lends this sweetness to the dish the compliments well with the spicy sausage.

WHAT YOU NEED FOR THIS INCREDIBLE AND DELICIOUS KALE AND SPICY SAUSAGE SWEET POTATO SOUP
5 cups of good quality bone broth
3 cups of water
12 oz of spicy Italian sausage, I like using Mulay’s Killer Hot Italian Sausage
2 lbs of kale, stems removed and roughly chopped
2 large Japanese sweet potato, diced
1 T of apple cider vinegar
2 T of lemon juice
2 T of minced garlic, I like using this one from Prohibited Provisions
salt + pepper to taste
WHAT TO DO FOR THIS ONE POT SPICY SAUSAGE AND KALE SOUP
In a large dutch oven, add the crumbled Italian sausage and brown on medium heat until it is crispy, remove from pan leaving just the leftover fat. Add the potatoes, and cook until lightly brown and then add the kale. Cook for an additional 2-3 minutes before adding the rest of the ingredients and cooking for 20 minutes before adding back the sausage and cooking for an additional 5-10 minutes, check the potatoes. Check for seasoning, and enjoy.
