Summertime treats in the form of mango coconut fat balls, these are like a trip to a tropical vacation.!
I honestly feel like I’ve been hiding under a rock for- I don’t know way too long. A couple months ago I discovered dried mango. Dried mango is literally my dried fruit spirit animal, not only is it crazy FREAKING good but in my mind, it is also the best thing ever. No guys, for real, it is tropical, chewy, sweet and the perfect thing to eat to get rid of the sweet tooth we all get at some point during the day.
Not only that is that but I have been dipping it in coconut butter and my mind has been blown.
Anyways. I decided to tackle my fat ball recipe and give them a tropical makeover and they are the perfect summertime treat. I mean, literally, these mango fat balls are gonna transport you to a tropical beach. I picture either the coast of Colombia or Panama, cause I grew up in Panama and my family is from Colombia.
I have to say that my food inspiration definitely comes from moments in time and bringing me back there. Growing up in Panama, I literally lived of sweet, ripe mango and fresh young coconuts. It was like a trip to the beach for me.
These are the perfect bites to enjoy for snack time, after the gym, and in my case an anytime snack.
I swapped out the dates in my original fat ball recipe for dried mango and added lime zest to add more tropicalness, is that word.? Anyways. Point is. You gotta make these.

SUMMERTIME TREATS: MANGO COCONUT FAT BALLS
-1 cup of dried mango, make sure it doesn’t have any sugar added, I get mine from Made in Nature
-1 cup of raw cashews
-1/4 cup of hemp hearts
-1/2 cup of coconut butter
-1/4 cup of coconut oil
-2 T of lime zest
-pinch of sea salt
-1/2 T of cinnamon
-3 scoops of collagen peptides
optional: I have used canna coconut oil instead of regular coconut oil, works amazing. I have added also Stillwater Ripple, and will add adaptogens if I feel like it that day.
INSTRUCTIONS
Add to your food processor dried mango and coconut oil until it is completely smooth. Then add the rest of your ingredients until a dough is achieved. The dough will be wet, that is totally normal. Place in the freezer for about 10 minutes until it firms up a bit, and then roll into bite-sized balls and lay flat in an airtight container and freeze. They last for months in the freezer but cause they are so freaking good, don’t think so. Remove from the freezer and let thaw for about 2-3 minutes before eating.
