I hope you all had a wonderful fourth of July! Those of you here in the states..

I decided to keep it low-key and chill in my apt. // go on some hikes and binge watch Netflix, last week was crazy busy for me and this week too SO. I took some me time.

Any who…

I’ve been meaning to share this post for a while…

If you babes follow me on Instagram and you watch my stories than I am pretty sure you’ve seen my obsession with breakfast salads.

I’ve been getting tons of questions about how I create these breakfast salads and truth be told.

They kind of shape themselves.

I don’t put much thought, I just kind of check out what I have in the fridge and go from there. Regardless I wanted to show you the how to guide.

I do like to keep the balanced, healthy fats, greens, protein and some healthy carb.

The How TO Guide- Breakfast Salad- FOLLOW OUR PASSION


You need a base


Micro greens.

Romaine lettuce.

Baby spinach.


Or a mixture of all of the above. I really use what I have on hand. I will admit that I have been known to head to Whole Foods cause its like a 20 minutes walk JUST for greens.


You need to decide what fillers you want.

This can range from, roasted sweet potatoes, roasted apples in bacon fat with cinnamon and cardamon, ( my newest obsession), roasted tomatoes, avocado slices or a whole one in my case, any roasted veggies you want.


This can be in the form of an egg, poached or fried, hey scrambled even works here. I personally like using the poached or fried, mainly cause I LOVE the yolk when it breaks. If you wanna keep it vegan you can use roasted chickpeas. Or maybe some black bean fritters. Or if you are a bacon lover like myself you can add some crispy bacon slices. I LOVE LOVE when they are thick slabs of bacon. YUMMM.


You wanna add one of the following, cashew cheese sauce, cause HELLO why not?

Lemon and olive oil, you can’t go wrong with this combo.

Pesto cause it brightens life.



Right before you dig in, I finish my off with some tasty AF and crunchy millet croutons.

Before we take off into salad breakfast land I wanna share why I am crushing on these crunchy bites of goodness.

FIRST of all they are, vegan, gluten free, non-gmo (which is  BIG one for me) and are total comfort food without the guilt and when I say guilt I mean they don’t make me sick, bloat or anything.

PLUS millet is so good for you, it’s high in magnesium, calcium, fiber, manganese and it is a complete protein!

My favorite ones are the original which have sea salt + onion flakes.

I am also loving the Italian ones SO good.

  1. I’ve never heard of breakfast salad but it sounds interesting. I’m not a huge fan of fried eggs, but I might give it a try.

  6. I’m not generally a salad person because I don’t like many dressings, but that picture looks delicious. It reminded me I can eat my eggs runny again. Time for breakfast, hopefully I have some greens in the house. 🙂

  7. Very nice and healthy looking too! I enjoy breakfast but it’s a simple meal for me with fruit, yoghurt or oatmeal or toast and coffee. I need to try this though I’d more likely have this for lunch. YUM!

  17. This looks like a yummy breakfast salad. I have never had a salad for breakfast, but I do like them any of time of the day. Why not through an egg on it and have it first thing in the morning?!

    My recent obsession is spinach, peaches, sunflower seeds and feta cheese!

  19. What a great idea. My husband and I lived in Japan for three years and having salad (and miso soup) was the norm there. Sometimes we still have it now that we live back at home in the states. I should do it more often. Thanks for the reminder!
