Hello, delicious! We love this pasta imposter, covered in this dairy free, filled to the brim with green pesto and a crunchy topping of Hi I’m Skinny Superfood Sticks. There is plenty of green plant-based goodness here…
To me, there is something about curly strands of colorful green veggies, regardless of how they are prepared I am a veggie addict. It is easy, fun to turn zucchinis into a pasta. Not only that but being able to eat this raw vegetable in a way that makes you think you are eating something decadent is truly amazing. Then the green arugula, parsley pesto creates something magical and totally amazing.
If you bugs don’t have a spiralizer, no worries you can totally use the julienne blade of a mandolin or a vegetable peeler to make thin strips. I actually bought mine on sale at William Sonoma.
While you can totally stop at just stuffing your face with the zoodles with the pesto, the superfood sticks take this meal to another level. The crunchy protein packed sticks are amazing. The first time I made this was as is and my momma bear saw the sticks that I had been snacking on with the pesto on the counter and decided to throw some on her bowl. I finally decided to join her when she went on and on about how her contribution made this recipe. Turns out she was true. Maybe the saying is true, moms do know best.

INGREDIENTS
1 large zucchini per person, 4 total spiralized
1 cup of fresh arugula
1/3 cup of parsley
1/2 cup of mashed avocado, I used a whole medium size avocado
2 tablespoons of tahini
2 tablespoons of nutritional yeast
1/4 cup of freshly squeezed lemon juice
3/4 cups of water, start off with 1/3 at a time, until you have the desired consistency
salt + pepper to taste
Hi I’m Skinny Superfood Sticks, about 1/2 cup per person to top
HOW TO PREPARE THIS GOODNESS BOWL
Put all the ingredients but the zucchini and the Hi I’m Skinny Superfood Sticks in a blender. I use my Blendtec Blender, until smooth and creamy. Taste and adjust seasoning as needed.
To serve, in a large bowl combine the zucchini noodles with the arugula pesto. Toss until fully combined. Divide into 4 bowls, top with Hi I’m Skinny Superfood Sticks and enjoy.
