It’s kind of funny my love for chocolate and bananas. Truth be told I have a soft spot for warm banana bread. When I was in high school I honestly would whip up banana bread recipes all the time and always just went with whatever ingredients we had in the pantry. I would try to make them a bit different each time and see how creative I could get without following a recipe. There was something fun about doing that, it brought me a weird natural high. I loved waking up at five in the morning to make some banana bread creation and then when I ditched bananas a few years ago as a way to help me balance my manic depressive and PCOS in a natural way I stopped my five am ritual of baking banana bread.

Until I reintroduced them late last year and then somehow a couple weeks ago after pouring my heart out in a post, my weird, fun and very early ritual of waking up and baking banana bread came back. It was a sign, and I honestly couldn’t believe how happy I felt. I woke up one day to make banana bread but instead of an actual bread, I made muffins.

Cause one I don’t live with my mom anymore so there aren’t five people ready to eat whatever I made while everyone else slept and two it is easier to give to people when they are in their own little wrapping.

Then I decided to combine my love of banana, banana bread, nut butter and chocolate and this creation sort of happened. It took a few tries but it was incredible.

I used my favorite no sugar chocolate ever, almond butter, almond flour and a few other goodies to create a good for breakfast, or anytime treat. OH and the best thing is they come together super duper easy.

Gluten Free Chocolate Banana Bread Nut Muffins

WHAT YOU NEED FOR GLUTEN FREE CHOCOLATE BANANA BREAD MUFFINS 

1.5 cups of mashed banana, about 3 bananas

3 T of ghee or coconut oil

1 T of vanilla extract

2 eggs

1/2 cup of almond butter or cashew butter

3/4 cup of almond flour

1 T of cinnamon + chaga

1/4 cup of cacao powder

1 tsp of baking powder + soda

1/4 tsp of salt

1/2 cup of each, chopped walnuts + dark no sugar chocolate, I like using this one here 

Preheat oven to 350 degrees. Line a muffin pan with cupcake liners.

In a large bowl combine the bananas, eggs, ghee, almond butter and vanilla extract until fully combined. Then add the rest of the ingredients. Pour batter into the muffins tins and bake in the preheated oven for about 16-18 minutes, until a toothpick comes out clean. Remove from oven and let them cool for about 8 minutes.  I know its hard. Remove from muffins tins and either let cool further or enjoy. I like to slather mine with more almond butter.

  1. My oldest is obsessed with warm banana bread too! Every time he sees that the bananas on the counter start to over ripen, he starts asking for me to make it. Can’t wait to try your muffins next time. I mean, who doesn’t love the addition of chocolate too?!?

  2. I can’t think of any fruit better for a muffin than a banana. They have to be our favorite, and adding chocolate makes them irresistable!
