There is nothing quite as satisfying as nailing the perfect paleo soft baked cookie that you can dip in homemade cashew milk. Oh and let’s be totally honest, it’s never just one cookie. Cause one is never enough, at least in my book.
I love baking my own cookies and dessert to be honest because I get to control the ingredients and decide what freaky combos I wanna try next. Cause I mean making fun combinations is one of those awesome pleasures in life.
I am SO happy to bring this crazy good, melt in your mouth perfectly soft Strawberry Pistachio Rose Cardamom Cookies. I use cashew butter as a base mixed with rose water, vanilla, ground cardamom and a few other goodies to create these lovely cookies. I made them a couple weeks ago, on a whim because I really wanted cookies and someone also wanted strawberries and the recipe kind of fell in my lap.
PLUS I feel like they are perfect for Valentine’s Day.
I normally come up with all my best recipes when I am either one traveling and try something delicious or two late at night or really early in the morning. These were late at night recipe that came out so good I made them again the next day and shot the recipe pictures as soon as the sun came up.
I don’t know something sparks up the creativity in my mind and makes me one happy girl that makes really great recipes, like this one.
I’ve been obsessed with using cassava flour and tapioca for a few months now. They make the best recipes and keep them paleo. SCOREEEE.
Oh and if you’re wondering what my secret to these cookies are honestly is using the cashew butter + ghee. GAME CHANGER for sure.
Alright my babes, gonna get to it now and give you the deets on the recipe.
Gluten Free Strawberry Pistachio Rose Cardamom Cookies
1 cup of cashew butter, just check the label and make sure it is completely sugar-free
1/4 cup of vanilla ghee
1/4 cup of maple syrup
1 T of vanilla extract + rose water
1 cup of cassava flour
2 tsp of ground cardamom
1 tsp of reishi powder + cinnamon
1 tsp of baking powder
1/2 cup roughly chopped raw pistachios
1 cup of fresh strawberries, diced into the size of whole pistachios
Preheat oven to 350 degrees.
In a large bowl combine the cashew butter, ghee, vanilla extract and rose water, and egg. Mix until completely combined and then add everything else but the strawberries and pistachios. Once that is well-mixed fold in the strawberries and pistachios.
Spoon the mixture into a parchment lined cookie sheet and bake for about 10-15 minutes. Depending on the size of the cookies, I went the larger route so I baked mine for about 14 minutes. They are soft and crumbly. SOOO good.
