Mood-Boosting Paleo Peach Pie with Crumb Topping
Summer is slowly creeping to an end and while I am kind of glad it’s over, I mean honestly while I love the sun for the hiking and outdoor adventures that comes with it I also miss the chilly, cooler air and really am excited about fall and winter in the mountains. I will say the summer produce is making me really wanna squeeze in as much as I can in the little time we have left with fresh summer peaches. Oh and since I discovered Palisade peaches this summer, thank you, Colorado, I honestly have been eating them by the pounds since they first appeared about a month or so ago. First, it was the caramelized peach pancakes from a week ago and now it’s this mood-boosting paleo peach pie with crumb topping because you really cannot have too many peach recipes.
Especially if you are weird like me and have 2 huge gallon sized bags of sliced peaches in my freezer so that I can enjoy them when they are no longer at hands reach. This is the beauty of this pie it works perfectly for an after-dinner slice warmed up with ice cream, or topped with coconut cream for an afternoon pick me up with expresso and make an even better breakfast with coconut yogurt and a morning latte out on the balcony.
At least that’s what I do. Feel free to copy and take credit, I honestly would love it if you did. Or at least make this mood-boosting peach pie.
WHY MOOD BOOSTING?
I am always looking for new ways to incorporate healthy omega threes into my daily eats, to warn of depression, anxiety and basically keep my mood in a very happy and healthy place. I keep the recipe low in sugar by just adding a couple tablespoons of maple syrup to the peaches and to the crumb topping. Crushed walnuts roam the crumb topping adding magnesium to our pie which is great at helping with anxiety and depression. Flaxseeds add this touch of nuttiness while also adding tons of healthy omega three fatty acids.
Mood-Boosting Paleo Peach Pie with Crumb Topping
filling
4-5 medium-size ripe peaches, pitted and sliced
2 tablespoons of tapioca starch
2 tablespoons of chia seeds
juice of one orange + lemon
2 tablespoons of maple syrup, see note *
1/2 teaspoon of each: ground cardamom + cinnamon
pinch of salt
crumb topping
2 tablespoons of each: hemp seeds, flax seeds, cassava flour and crushed walnuts
1/4 cup of almond flour
2-3 tablespoons of cold grass-fed butter
2 tablespoons of maple syrup
1/2 teaspoon of each: ground cinnamon + cardamom
pinch of salt
pie crust: slightly adapted from Otto’s Cassava Flour Paleo Pie Crust
1/2 teaspoon of salt
1 cup of Otto’s Cassava Flour
2 tablespoons of tapioca starch
1/2 cup + 1 tablespoons of ghee
1 tablespoon of lemon juice
1 -3 tablespoons of water
note: depending on your peaches, and how sweet they are. I sometimes don’t feel the need to add the maple syrup to the filling and sometimes I do. It is up to you, you can also just add one tablespoon.
Mood-Boosting Paleo Peach Pie with Crumb Topping Directions
In a bowl add the ghee, tapioca starch, and cassava flour, to make the crust. Using a fork or pastry cutter, cut the ghee into the cassava flour. Add the rest of the crust ingredients and mix until a dough begins to form. I start off with one tablespoon of water at a time, depending on the day, sometimes one is enough. Once the dough is formed, it shouldn’t be sticky at all. Form into a ball, flatten slightly into a disk and cover with plastic wrap and place in the fridge for about 20 minutes.
Preheat oven to 375.
Grab the dough out of the fridge, and place in between both pieces of the parchment, and using your rolling pie start rolling out the dough. Roll it our about 12 inches in diameter and about 1/8 of an inch thick. Carefully remove the top piece of the parchment and then place pie pan over the exposed pie crust. Flip over and gently remove the parchment paper. Using your fingers finishing forming it and then cut off any excess dough. There will some left over.
In another bowl add the ingredients for the filling carefully mixing all the ingredients. Set aside for a moment.
In another bowl add the ingredients for the crumb topping, mixing until everything resembles wet sand. Set aside for a moment.
Grab the pie pan that is lined with the crust, add the peach filling and then sprinkle the crumb topping on top.
Bake for 18-20 minutes. Let cool slightly before enjoying the hell out of it.

while I myself don’t follow a strict paleo diet, a lot of my recipes end up being since I don’t bake with soy, sugar or any what products.
